How to identify Manchego cheese
The term “Manchego”The brand label should contain the term “Manchego” and, if the cheese is made with raw milk, also read “artesano” or “artisanal”.
The casein tabThe casein tab, comprising a serial code - five numbers and two letters - together with the text “España, Denominación de Origen, MANCHEGO” should be stamped on the rind, on the opposite side to the brand label.
The PDO labelAttached to the brand label, you must find the Manchego Cheese PDO Regulating Council’s label, with its logotype, stamp and serial number. For smaller cheeses and already-cut portions, this label should be attached to the product’s top right corner and be crossed by a blue or green line, respectively.
